Moroccan Spiced Grilled Chicken

Juicy grilled chicken with Middle Eastern spices and the tang of preserved lemons.

Ingredients

  • 2 tablespoons diced preserved lemon peel
  • 2 tablespoons lemon brine from preserved lemons
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 3 green onions chopped
  • ¼ cup chopped parsley
  • ½ teaspoon coriander
  • ½ teaspoon turmeric
  • 1- teaspoon sesame oil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons Sambal Oelek
  • 1 whole chicken cut into serving sized pieces

Instructions

  • Combine all ingredients except chicken and blend well. Pour over the chicken pieces and marinate, refrigerated for at least 4 hours, or up to overnight.
  • Remove chicken from marinade and grill over medium hot gas or charcoal fire until cooked through and juices run clear.
